Dilled Green Beans

2 pounds green beans, washed and trimmed
4 cloves garlic
2 1/2 cups vinegar
1/4 cup salt
4 heads fresh dill
2 1/2 cups water


Pack beans lengthwise into pint jars, leaving 1/4 inch headspace. To each pint, add 1 clove garlic and 1 head dill. Combine vinegar, water and salt; bring to a boil. Pour boiling liquid to cover beans; adjust lids. Process in water bath for 7 minutes. Do not eat for at least 3 weeks.

That is similar to my Grams recipe however she adds a smidgen of paprika as well. I'll get the full recipe when I get a chance and post it as well.

Sounds easy enough and worth the effort, too. Last week Foodland had pickled beans $6.99 a quart jar.

I cut out the salt and add a hot pepper to the jar.

Funny, my grandmas recipe was the same one however she filled me in on the changes she made. She told me my Great Aunt still uses the traditional method however the taste is different. So, here are her instructions.

Makes 4 Pints

2 lbs. green beans - trimmed
1 tsp cayenne pepper - 1/4 per pint
4 cloves garlic - 1 clove per pint
2 tsp salt - 1/2 tsp per pint
4 heads dill - 1 head per pint
2 cups vinegar - 1/2 cup per pint
Boiling water

Pack beans leaving 1/4" headspace. Add appropriate ingredients to each pint. Top off with boiling water. Process in boiling water bath for 10 minutes.

So the recipe is slightly different. My gram says that it is important to make sure you have the pepper and other ingredients in the jar before adding the boiling water to top off. I have to say that I have had other versions and my grandmas are always the best. I may be a little biased but oh well.

Hi, I have a this recipe but without the water bath. I did a batch of each and the ones that I water bathed (is that even a word!) anyway they look all wrinkled. Not attractive for gift giving. Is the water bath necessary? Any advice would be so appreciated.
Also, I am new to this blog/chatting thing so if I am doing it wrong please let me know!

tinaleah, you are doing fine, this is a forum however and not a blog or a chat. A blog usually consists of your own writings that people are able to comment on.
