From what I read Mylar is great because it doesn't allow air to leak through the bag. And I've read that those clear vacuum sealer bags are not good at keeping the air flow limited.
But, I have food in vacuum sealed (Food Saver) bags that is now over 3 years old. I would think if they weren't good for preventing air from leaking into the bag, then the vacuum would have gone away by now. But it still has the vacuum it did 3 years ago. I know it's not just the plastic shaping itself and getting stuck in that shape because when I poke a hole in it the vacuum is released.
So, it seems to me that the inexpensive vacuum sealed bags are pretty good at keeping out the air.
Am I missing something?
