Alright, I'm just learning how to cook. When my hubs and I wanted something new, I looked up some Indian food recipes. We didn't have most of the ingredients, so we improvised. Here's that recipe.
1 medium sized chicken breast per person
1/2 medium onion per person
1 can stewed tomatoes
1 cup sour cream
1/4 cup milk
curry
turmeric
chili powder
salt
black pepper
garlic salt (or a couple cloves of fresh)
cajun seasoning (careful not to add salt if this is used)
white rice
Put chicken in heavily spiced water to boil. Don't too much about adding too much because the chicken won't absorb it all. When the chicken is almost done cooking chop onion and start sauteeing with a pinch of salt. Take chicken out and cube. When onions are translucent, add tomatoes and chicken.
All of the spices are to taste. I put about a tablespoon each of curry and turmeric on top of the food. The rest is the amount you would usually add to your cooking. If you're using the cajun seasoning, wait on adding salt. Add enough cajun spice to either be salty or hot enough. If you need more heat, use chili powder.
When the spice mix is where you like it, add the sour cream. The sauce should be like thin brown gravy. If it's too thick, add milk. If it's too thin to coat the chicken, boil off for a minute.
For the rice: Use whatever you like. I've been using the last of the instant rice in my cupboard. I like to substitute a cup of water, for a cup of the broth we boiled the chicken in. This makes the rice a yellow color and adds just enough flavor.
I hope you all enjoy this recipe. I just throw in whatever sounds good and eyeball the amount, so feel free to change whatever you like and tell me how it goes.
