Going back some pages on this topic, and not seeing any scrapple threads, I would like to tell about a great way to use the scrap pieces of chicken that can be picked off the carcass.
Ingredients:
About 1-2 cups of shredded finely chopped chicken (giblets are a plus)
4 cups of chicken broth (or left over gravy cut with broth- equalling 4 cups total)
2 cups of cornmeal
A dash of Sage
Fresh ground black pepper
Salt
In a big saucepan bring broth to boil. Put in chicken, giblets, if available, salt, pepper and sage to taste. bring back up to boil. Slowly pour cornmeal in while gently stirring. Turn down to low heat and stir constantly to the consistancy of a mush. Remove from heat and cool. When still warm, pour or ladle into oiled bread pan and set somewhere to cool. Sllice into slices and flour both sides, fry in oil till browned.
