My son shot his first ducks today! I have never cooked duck and was hoping to serve this Christmas Day. Does anyone have any suggestions about preparing/cooking these? Thanks!

Duck is "Strong" and "Dry"
Fill with a stuffing that has a LOT of green onions. use tooth picks to cover the breast with beacon then bake in an oven bag.

They were surprizingly good! What I did was soak them in salt water for two days, changed water daily. Then I marinated them for 1/2 hour, popped them in a bag, and cooked them until they were medium well. Everyone had some and said they liked it. We will definitely do it again, they go hunting next week. Thanks for your suggestions!

I always stuff mine with some oranges and sprinkle in a little sage. *I may try the onions next time. *

We tried a new recipe recently for "duck nuggets". Cut the duck into bite size pieces, roll in mixture of flour, salt and pepper. Fry until done (outside should get crunchy). Serve with a honey mustard sauce (equal parts honey and mustard with ginger to taste). It was good, and something different to do. We get a lot of ducks here during hunting.

Update on duck recipe. We just had duck again and this time we breasted them, soaked the breasts in salt water for two days, soaked overnight in Allegro marinade, butterflied the breasts, stuffed them with a thick slice of cream cheese and some pepperochini peppers, wrapped the breasts in thick sliced bacon, and grilled them. These were outstanding cooked this way. I thought I would share this with all of you who like to cook duck.

Try this one. It is a little complicated but well worth it.
Heavenly Duck Breasts with Kentucky Bourbon
Date Marinade (Make this first):
* 3 tablespoons Kentucky Bourbon
* 2 tablespoons orange juice concentrate
* 1 cup chicken broth
* 10 dried dates, pitted
Duck Breast Marinade:
* 1 cup light brown sugar
* 1/2 cup each: dark molasses, honey, maple syrup and orange juice concentrate
* 1/2 cup Kentucky Bourbon
* 2 tablespoons unsalted butter
Duck Breasts:
* 4 whole duck breasts, boned and halved
Date Sauce:
* 1 cup raspberry vinegar
* 2 tablespoons minced shallots
* 8 tablespoons unsalted butter
* 1/2 cup Kentucky Bourbon
* 2 cups whipping cream
* Salt
* Cracked black pepper
* Clarified butter
1. Combine all Date Marinade ingredients, blend. Let stand 3 hours or chill overnight.
2. Combine all Duck Breast Marinade ingredients in a medium saucepan., simmer until melted. Cool. Add duck breasts. Let stand 3 hours or chill overnight.
3. Combine all Date Sauce ingredients to Date Marinade, blend. Simmer uncovered on low heat about 20 minutes until dates are tendered and liquid is absorbed. Transfer mixture to food processor. Process into puree. Boil whipping cream, reduce by half, blend into puree. Keep mixture warm.
4. Remove breasts from marinade, drain. Season breasts with salt and cracked black pepper. Sauta breasts in heavy frying pan with about 6 tablespoons clarified butter. Fry about 3-4 minutes on skin side; same on meat side for medium rare. Glaze breasts 1 minute under broiler. Cut into thin slices. Arrange slices over warm sauce on plate.
The Bourbon won't hurt the kids, there will be just the flavor of Bourbon with out the kick.

Well, duck and goose season is over here for the season, but I make this appetizer with duck breast or scraps from goose legs and thighs.
Chop duck/goose meat into marble sized balls
chop jalepeno peppers into rings, remove seeds. You can use milder peppers too.
cut strips of thin bacon into 3-4 inch pieces.
Stuff duck marble into jalepeno ring, wrap in bacon piece, stick toothpick through it, bake at 350 until the bacon looks like it's getting crispy.
It's my favorite.
We also make a great goose pot pie. You can probably find any old pot pie recipe and substitue goose for the meat. You know, peas, carrots, potatoes, celery, cream of mushroom soup concentrate w/o the water.

smoke those babies...get a smoker,, its unreal what smoked duck tastes like,,,
anyways,,, i worked in a restaurant in New Orleans that had a smoked duck and andouille sausage gumbo also a smoked duck salad..
learn to smoke those things and you'll find plenty recipes online
