View Full Version : Hole in the wall (eggs)

I used to make these for my kids for breakfast. Take a slice of bread and put it on a hard surface (like a cutting board). Take a small diameter drinking glass and push the rim through the bread so it punches out a perfect circle. Butter the bread (and the bread circle) and put them in a skillet. (Dont put circle back in the hole...have it off to the side...in the skillet). Put an extra dab of butter in the hole and drop a fresh egg into the circle. Medium heat. When it's near done, put a few small dabs of butter on the top side of the bread and then flip everything. Finish frying to your liking. Think I'll have one as soon as I get done typing this.

My mother was in the hospital when I was about 7-8
so my two sisters and I stayed with an aunt that we barely knew. She fixed these eggs the first morning.
She called them One Eyed Jacks.
I have always loved them.

I just made some for my kids breakfast :)
They enjoyed them so much they both asked for seconds and the wife wondered in and said 'That looks good, I'll have a couple of those'.
So yep, highly recommended.

How cool! Thanks for posting this - I had forgotten about these!
We called them "Toad in the Hole" - but "Hole in the Wall" sounds nicer! :D

My Dad called them "Toad in the Hole", also.
Around here "One eyed Jacks" are made the same but you dip the bread in a egg/milk mix, like french toast. Both are good, whatever you call them.

Oh man, my dad would fry these up with bacon on our griddle, I got seconds. Talk about a meal fit for a king!
Finns think I'm weird for eating them...but I"ll pass on the blood pancakes thank you very much LOL.

We always added a couple spurts of Tabasco Sauce and called them Bull's Eyes.

LOL We always called them EGG IN A FRAME My husbands mom called them TOAD IN A HOLE I always loved them too!

I make those and add chili or chili beans on top with a side of corn beef hash and call them cowboy eggs.

Thanks for bumping this thread.
I've been planning to try them for a while, and it had slipped my mind. We do a lot of breakfasts on the griddle. (Two burner version has a permanent place on my stove.)

Mom called them Eggs in a Basket as well; they were one of my favorite breakfasts as a kid. Now they're one of my two-year-old's favorites ;)
Those pics on Wiki look disgusting though - I butter the bread (heavily) before it goes in the skillet or on the griddle, then butter the other side, and punch the hole out there. Makes it a nice, buttery, golden brown.
When I was in 2nd grade, the PTA did a cookbook for a fundraiser, but they didn't get enough recipes. I wrote up this recipe and submitted it, and it was published. Mom still has that cookbook somewhere.

"Hole in the Wall" rang a tiny bell deep in a dark corner in the back of my brain, and I thought I remembered something known as "Toad in the Hole". I Googled it and what do you know, I came up with dozens of recipes. Here are 32 recipes for it at ONE SITE!

I have a similar recipe from my home economics 1 class, many,many years ago. They really don't even have home ec anymore, and that is a shame
Cheese Bunnies
Cut a circle from the top of a hamburger bun with a cookie cutter. Do not cut the bottom bun. Lift circles with fork and butter insides of hole. Place buns on cookie sheet and break an egg into the opening. Bake for 25 min in 325 degree oven, or to doneness you desire. Top bun and cooked egg with a slice of cheese during the last 5 min of cooking time.

super simple, but I didn't appreciate it at the time, as I only liked cremated scrambled eggs, not fried or boiled or poached. And the home ec teacher had a rule that you had to try a bite of every dish that was cooked in class.
I think these holes in the wall sound yummy. I love fried toast, and I now like fried eggs. Yellows crawly, not runny or hard cooked.
