I made this yesterday with homemade sprouted wheat flour and it turned out so good!
Mix together:
3 1/2 cups whole wheat flour
1 tsp. baking soda
1/2 cup brown sugar
1/2 tsp salt
Add enough buttermilk (about two cups) to make a thick batter. Thicker than cornbread batter.
For best results, let sit overnight- but you don't have to.
Spread about a 1/4 thick on one or two cookie sheets and bake at 350 degrees for 15 minutes. *
It's going to be like cake at this point. *Whiz it in a blender or food processor or break it up by hand into tiny pieces then spread back out on the cookie sheet to dry til crunchy in a warm oven 140 ish, or by the woodstove or in your dehydrator. *
If you cook it until it's crunchy and then try to blend it, you'll just end up with flour again.
Tip: If you are out of buttermilk you can just add 2 TBLSP of lemon juice or vinegar to regular milk.
This is very basic and lends itselt to all sorts of variations, such as using molasses or honey instead of brown sugar. Using other flours. Maple flavoring. Cinnamon. You can dress it up with nuts, dried fruits and raisins just like granola after it's cooked.
