View Full Version : Potato soup recipe wanted

We were recently in town and stopped at a Subway sammich shop. The sign for the soup was for a potato-chipotle pepper soup but it was all gone. Sounds good. Does any one have a recipe for something like this? Would like to make some and can it.

I'm thinking potatoes, chicken broth, onion, maybe a bit of bacon and a chipolte or two. Jar it up, pressure can then thicken it up when serving. Does this sound right?

I make mine using milk as a base and thicken it with mashed potatoes. I've never really had a recipe for it but basically start with a pound of bacon fried up in the stock pot. Add some onion, salt and pepper. Fold in your cooked, cubed potatoes. Add milk and then thicken with mashed. If I have ham, I'll put that in as well.

hi! I have a potato & ham soup recipe that i'm willing to share & you are more than welcome to add bacon & chipolte under ONE condition: you have to tell me how it goes. lol.

Potato & Ham soup
3 1/2 Cup diced potatoes
1/3 cup diced celery
1/3 cup onion (i just use a whole small)
3/4 cup diced cooked ham
4 cups chicken broth
salt to taste
pepper to taste
5 TBS butter
5 TBS flour
2 cups milk

combine potatoes, celery, onion, ham, and broth in Lg pot. bring to a boil & then turn down to medium heat until potatoes are done. add salt & pepper.
In a saucepan, melt butter, then wisk in flour over medium heat stirring constantly. very slowly, about 1/4 cup at a time, stir in milk to avoid lumps. continue to whisk until thick, about 5 minutes. stir mixture into the LG pot with the potatoes. cook until heated & serve & enjoy!

add your bacon & chipolte where you feel would be a good time to add and if you use my recipe, let me know how it goes! sounds nummy!

I do a less salty vegetarian potato soup, using cooked taters, chopped onion sauteed in butter, then use the butter & some flower (flour! :p ) to make thickening with a milk base. I also add a tablespoon of Italian seasoning - the thyme and marjoram really bring out the flavor! Since this recipe is so close to my "creamed new potatoes and peas" recipe, I also usually add peas to it.
Grate in a carrot for color too, if you like - it's yummy! Chipotle peppers would be a wonderful addition & I'll try that next!

Personally, I'd just can the potatoes separately. Then mix with the other ingredients for your soup at the time of use. That way you can use the potatoes for any dish that you decide to make later.

The wife and I were just talking about potato soup and we both had the same question. We freeze veggie soup with great success but how well does potato soup hold up. We haven't tried to make any yet and are quite interested in the recipe's others may have. Also, how much of a kick does chipolte have. I can handle a little heat but for the most part I'm a wimp.

thanks! i'm enjoying the forum and all the posts. everyone is so nice here! oh, let me know how you like the soup if you add the bacon & chipolte! it sounds nummy, but i'm just not that brave right now. LOL! :D
