This is one of my favorite recipe sites. I really like the way the recipes are presented and the chart for each recipe is pretty easy to follow.

I was thinking about making some truffles this weekend. I always thought they would be difficult however the recipe is quite simple.

did you get to make the truffles? I used to make them around christmas, and I have two good, and simple recipies. Have not made them in ages, but the Amish store had a sale of Ghirardelli baking chocolate for 50 cents and I could not resist a bargain like that, so have to use it. :)

I haven't had a chance to make them yet however I do have a silicone double boiler on the way so perhaps soon. *I'd be interested in your recipes if you feel like giving them out.

oh oh, I just see the recipies are in grams, hope you have a gram scale. Otherwise they are super easy, fast and almost foolproof. (and yummy) you can add other flavorings, instead of rum, some instant coffee for instance.
125 g of sugar
2 eggs
3 Tablespoons of cocoa
200 g of coconut oil
1 tablespoon of rum
3 tablespoons chopped almonds,
beat sugar and eggs until stiff and creamy, add cocoa and melted coconut oil and rum. shape into balls and roll in chocolate sprinkles, chopped nuts or whatever you like.
second recipe:
butter truffles
250g of chocolate, milk or dark
100g of butter
3 tablespoons of cream
2 eggyolks
melt chocolate carefully (it scorches easely), cream butter, add chocolate, eggyolks and cream. put icedubes in the sink or someplace where you can place the bowl, beat on ice until stiff, then roll into balls

Looks great and thanks! I actually have a triple beam scale and now I have a good reason to go buy some Bacardi Anejo!

They didn't have the Anejo so I went with Meyers. I haven't had it but they said it is a good rum. The liquor store said I could use any bottom shelf brand but I'd rather something better in case I'm up for a drink as well. I did forget the coconut oil so I may have to stop by the store on the way home.

If you are up for a drink while you cook with rum try Captain Morgans Private Stock. Smooth as silk and it makes a killer chocolate frosting.

Is that a spiced rum? I'm not a huge fan of the spiced versions, just light and dark for me.

I finally have everything to make the truffles, coconut oil was a little bit of a bear to find, and now that I'm looking at the recipe, I'm a little nervous about the raw eggs. Am I supposed to cook the mixture in a double boiler?
Of course I'm not that patient so I'll probably have made them by the time you respond but oh well.

I spent about 4 hours making truffles last night. I tried the coconut oil/rum recipe as well as the recipe on cookingforengineers.com. Both came out well however the coconut/rum recipe is very soft at room temperature. The flavor and texture was nice though.
The other recipe is fantastic. I actually tempered some white chocolate and covered a few of them. Quite challenging however fun and a nice way to spend 4 or so hours.
