I had this idea for making a pumpkin roll but instead of pumpkin, use banana, ie. Banana Roll.

I didn't bother looking for a recipe but managed to convert the pumpkin roll recipe this morning. *(I wired our oven in yesterday so I had the itch to bake)
Here is what I came up with:

3 eggs
1 cup sugar
2/3 cups mashed banana (Mine were frozen so I mashed and microwaved for about 45 seconds)
1 teaspoon lemon juice
3/4 cup all purpose flour
2 teaspoons cinnamon
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon nutmeg

1 1/4 cup powdered sugar
8 oz. Cream cheese
½ teaspoon vanilla

Beat eggs five minutes at high speed.
Gradually add sugar, beating well.
Stir in banana and lemon juice.
Combine flour, cinnamon, baking powder, salt, *nutmeg.
Add to pumpkin mixture.
Blend well.
Grease and flour a jelly roll pan.
Bake at 375 degrees for 15 minutes.
Turn it on towel covered with powdered sugar, roll up in towel.
Cool ½ hour.
Mix 1 cup powdered sugar, cream cheese, butter and vanilla.
Beat and spread, re roll and slice.



I ended up baking my bread a little longer than necessary but it was the first time using the oven. *Other than that, I'd probably add some walnuts or pecans to the dough before baking next time. *I only had peanuts and didn't think that would work as well.

P.S. My wife did find a recipe on the internet but it makes me happier to think I came up with it.
