Carob bean, *the pod, really, can be used thus:collect dried pods from under the tree, keep them for as long as you like, steam a few pods, when soft, twist apart and remove beans, plant them, if you want, then, two possibilities that I know how to do, and do recommend, and another which I have heard of.
i dry and grind: this is carob powder;
ii put equal parts pod and sugar in pan, heat till caramelised, add eight parts water, let simmer for a half hour or so, when cooled, strain and put in jug, keep it in the fridge or drink as is;
iii make a syrup from the powder. This is added to water for a summer drink. Leftover pod can then be made into powder, or put into the compost.
iv A sprinkle of carob powder in the bread mix give a harder crust: not too much or you will be cursing it. ;)
