I am looking for recipes to use that are similar to the bisquick type mixes for biscuits, pancakes, etc. The ones I have found on-line don't have the recipes attached to know how much mix to water or milk, etc.
I work and need something quick sometimes when I get home, but can't afford to buy the premade mixes in our local store.

QUICK MIX
8-1/2 c all purpose flour
4 Tbs baking powder
1 Tbs salt
2 tsp cream of tarter
1 tsp baking soda
1-1/2 c instant nonfat dry milk or dry buttermilk
2-1/4 c vegetable shortening
In large bowl sift together the dry ingredients. Blend well. With pastry blender or heavy duty mixer cut in shortening until mixture resembles cornmeal texture. Put in airtight container and store in cool dry place. Use within 10 to 12 weeks.
BISCUITS
3 c quick mix
3/4 cup water
Preheat oven to 450. Grease a baking sheet. Combine quick mix and water in a medium bowl. Stir until just blended. Drop by tablespoons onto greased baking sheet. Bake 10 to 12 minutes until golden brown
Pancakes
2-1/4 c quick mix
1 Tbs sugar
1 egg beaten
1-1/2 c water
Combine quick mix and sugar in medium bowl. Mix well. Combine egg and water in small bowl. Add all at once to dry ingredients. Blend well. Let stand for 5 to 10 minutes. Cook on hot oiled griddle.
MORNING MUFFINS
2-1/2 c quick mix
4 Tbs sugar
1 egg beaten
1 c water
butter or honey if desired
Preheat oven to 425. Butter muffin pans. Place quick mix in medium bowl. Add sugar and mix well. In a bowl combine egg and water. Add all at once to dry ingredients. Stir until just blended. Fill muffin pan 2/3 full. Bake 15 to 20 minutes until golden brown. Serve with butter and honey. You may add 1/2 c of chopped dried fruits or nuts to mixture. For blueberry muffins add 1 c frozen or fresh blueberries to batter. For apple muffins add 1 c raw grated apple to batter and increase cooking time to 20 or 25 minutes.
