The second thing I learned about dumplings was that they're very different in the South than they are in the North.

Mom's Iowa dumplings perched on top of sauerkraut, and under that was a layer of hotdogs. They were glossy puffs of steamed bread and I've never been able to duplicate them, as she made them without a recipe and never wrote the ingredients for me.

In Arkansas, the lady I worked for left me a chicken on the boil and a bowl of flour to make dumplings with for her Sunday dinner. She assumed everyone knew how to make the grissly rubber erasers that they call dumplings in Arkansas, and I thought everyone made dumplings like Mom's. We were both wrong - and we won't say any more about the nasty mess I made of her poor chicken!

SO . . .do you make dumplings? If so, what are they like, and how do you make them?

The dumpling recipe I have is basically a cornbread recipe with added shredded cheddar cheese. Very satisfying! It's in my red and white checkered cookbook - BHG I think.

I use 2 cups flour, 1 tbsp baking powder, 1 garlic clove, minced, and 2 tsps fresh parsley, enough milk to make dough1 ... add to whatever I am cooking, put a lid on it and wait 15 minutes... done and delicious

My mom made a huge kettle of beat soup for Christmas dinner every year as far back as i can remember... In it she always made what she called "sinkers", which were really "dumplings"...

Here's her exact recipe..

(dumplings) sinkers

2-1/2 teaspoons bakeing powder
8 cups flour
4 eggs
1 tbl garlic powder
pinch of salt
Water , untill it makes a heavy dough

Pull off small pieces of dough and drop them into the simmering beet soup. let the soup simmer untill "sinkers" are cooked through.

Dang, i sure love those things!!
