The second thing I learned about dumplings was that they're very different in the South than they are in the North.
Mom's Iowa dumplings perched on top of sauerkraut, and under that was a layer of hotdogs. They were glossy puffs of steamed bread and I've never been able to duplicate them, as she made them without a recipe and never wrote the ingredients for me.
In Arkansas, the lady I worked for left me a chicken on the boil and a bowl of flour to make dumplings with for her Sunday dinner. She assumed everyone knew how to make the grissly rubber erasers that they call dumplings in Arkansas, and I thought everyone made dumplings like Mom's. We were both wrong - and we won't say any more about the nasty mess I made of her poor chicken!
SO . . .do you make dumplings? If so, what are they like, and how do you make them?
