Here's my version of "Mercado Juarez Shrimp" . Mercado Juarez is a restaurant here in Dallas.
I half cook some beacon and saute some jalapenos quartered long wise & seeds and veins removed. Let cool on paper towels. Blot excess oil with towels.
Snuggle a slice of jalapeno up to a shelled shrimp and wrap with the beacon. Slide several on a metal skewer. Marinade in olive oil and your choice of spices. Grill over coals for about 6-8 min.
I have served them as a appetizer or with pasta as a main dish.
Good hot or at room temp. I think they are even good the next day cold.
