Nothing hard or fancy about this one!

Just spread some cream cheese on a snack cracker, cover with hot pepper jelly, and ENJOY!

I gave some of this to a neighbor, and later he said NOW he understood why God created Jalapeno peppers! I had a dickens of a time getting him to try it - he thought it must be a joke! After, I got him to try it, his wife grumbled that he was addicted and she had to learn to make it!

Here's how I make mine:
1 *or 2 Jalapeno peppers, chopped fine (decide how many, depending on how hot you like the pepper jam)
3 red bell peppers diced fine (or mix colors - yellow and orange look good too!)
3 green bell peppers, diced fine
1 onion, chopped fine
1 1/4 cup red wine vinegar or apple cider vinegar
5 cups white sugar
1 ounce liquid pectin or 1 pkg powdered pectin

Bring all ingredients to a boil, except the pectin. Add the pectin and boil the mixture hard for another couple of minutes. Remove from the heat and stir it for about 5 minutes to cool the mixture. Skim off any foam Put into clean jars and seal.

This will fill 6 eight-oz jars.

The first treat is to put the FOAM that I skimmed off onto crackers with cream cheese. You don't want to waste any of this stuff!

I'm going to have to try that recipe. I get my jelly from friends who have a jam business, so I've only been making freezer jams.
It is amazing stuff! Sweet heat!

That is soooooo good.

I also love to take a cracker, spread some cream cheese or sour cream on it and top with a slice of pickled jalapeno. Nice cold beer and I am in heaven.
