HOT COCOA

1 T sugar
1 T cocoa powder
2 T water
1 C milk
Mix sugar, cocoa powder, and water in a small saucepan over low heat. When thoroughly mixed add milk and heat to desired temperature. I usually heat it on low but you can turn it up to medium.

I've also used powdered milk, 3 T of the milk powder to 1 cup of cold water, mix thoroughly, then add to cocoa mixture. I tried adding the milk powder with the sugar and cocoa powder but it didn't dissolve as easily.
Also I found that when using Hershey's cocoa powder I needed to add a dash of salt to the sugar, cocoa powder mixture. When I use the Nestle's cocoa powder I didn't need to add the salt. This is the way my mother made hot cocoa when I was a kid, from scratch.
You can make this in multiples, though I've only doubled the recipe, if you have a larger family. Nice on a chilly morning. You can also add minature marshmallows if you have them on hand.

This recipe comes from the book "Going Solo in the Kitchen" except for the fact that I add a dash of salt. I also make it using powdered milk.
