View Full Version : Hummingbird cake

3 cups flour
1 and 1/2 cups granulated sugar
1 tsp. salt
1 tsp. baking soda
1 and 1/2 ground cinnamon
3 eggs beaten
1 and 1/2 cups olive oil
1 and 1/2 tsp vanilla
1 eight ounce can crushed pineapple with juice
1 cup pecans
2 cups chopped bananas (ripe)
1 cup coconut
Icing recipe follows
(additional pecans of garnish)

Combine flour, granulated sugar, salt, soda, cinnamon.
Add eggs and oil and stir until all ingredients are moistened. (Do not beat, or the cake will be tough!). Stir in vanilla, pineapple, 1 cup pecans, the bananas, coconut. Turn into a well-greased 9 x 13 pan, or two 9 in. round cake pans. Bake a 350* for 55 minutes (30 - 35 min. for round pans). Let it cool completely. Spread with icing and sprinkle with pecans. Put it in the ice box.

Icing: ( x 1.5 if using round layers)

One 8 oz. soft cream cheese
1 stick softened butter
1 lb. confectioners sugar
1 tsp. vanilla.

Beat these together and spread on the cake.

This has to be the food of angels! I haven't had one of these in years, and last weekend my aunt was talking about it....must be I'm s'posed to make one, lol! So glad to have seen your recipe! :-*

While scanning the list of ingredients for how many humming birds it had in it . . . I saw that this is probably a nice, dense, moist, fruity cake!

Why the name? It's sure memorable! ;D
