PUMPKIN CRISP
1 (15 oz.) can pumpkin
1 cup evaporated milk
1 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 (18.25 oz.) butter flavored yellow cake mix or golden butter cake mix
1 cup chopped pecans
1 cup butter, melted
Stir together first 5 ingredients. Pour into a lightly greased 13 x 9-inch baking dish. Sprinkle cake mix evenly over pumpkin mixture; sprinkle evenly with pecans. Drizzle butter evenly over pecans.
Bake at 350 degrees for 1 hour to 1 hour and 5 minutes or until golden brown. Remove from oven and let stand 10 minutes before serving. Serve warm or at room temperature with whipped cream.
Serves 8-10
OK, I've done some other variations on this:
In a 9X13 pan or glass dish (I spray with non stick), put a can of fruit pie filling (I use two sometimes). Over this put a box of dry cake mix. Melt 1 cup (2 sticks) of butter and pour over this, bake around 55 mins at 450. It's SO good.
The best one I've done is cherry pie filling with chocolate cake mix. Put whipped cream or cool whip on the individual servings. (tastes like black forest cake).
I've done apple pie filling with spice cake mix; the pumpkin one with spice cake mix.
You can see that you are only limited by your imagination (and/or tastes). ENJOY!
