Hey Guys;This receipe sounds great except the pre-packaged noodles are crap.what I do-

2 1/4 cups flour/semolina

11 egg yolks plus 1-2 Tbls.water (depending)

I mix this initially in my Kitchen Aid Mixer w/dough hook.
Knead it by hand on floured granite counter,until its smooth and elastic.Put into bowl/cover with linen or cotton towel.
let rest for 30 min

Cut ball into thirds and roll out with rolling pin.I use a wooden ruler w/metal edge and a sharp knife.I have an Ajax cutter but I am way faster than the cutter.

Only cook in boiling water until Al-Dente.
After you have done this a few times it becomes really quick and easy.And you'll never buy noodles again.-
