Just got the recipe from my Bro-in-law. This stuff is YUMMY!
1/2 lb sweet Italian Sausage, bulk or out of the casing, sauteed in a big pan (remove it and set it aside.)
Chop in big chunks:
1 small eggplant (peeled first!)
2 small zucchini (Don't bother to peel them - just cut off the stems)
1 onion (big as you like)
1 red or orange pepper
any other veggies you like
Sautee the veggies in the big pan in the remaining oil from the sausage. Dump in a quart of stewed tomatoes when the veggies are starting to get soft. *Crush a clove or two of garlic and add to the mix. Add dry basil or italian seasoning, salt & pepper to taste. Add the sausage back in and simmer. Sprinkle on some grated mozzarella so it melts into the soup.
Fresh chopped basil would be even better, but it's too late in the season for it here. *
I make a lot - and add mixed frozen veggies when it's about half gone. It's all good!
Edited to add: I haven't tried cumin in this yet, but eggplant and cumin taste wonderful together. I'll do that with the left-overs tomorrow.
