Take two cups of cooked chicken and cube or shred it. Put it in a large sauce pan with a little butter. To that add the following: a stick of celery cut up, a green onion or two (cut up), some pine nuts, some thinly sliced baby carrots, about a cup of diced mushrooms, 2 - 3 black olives cut up fine, 1/4 red pepper, cut up fine, 2 cans of cream of chicken soup, 1/3 cup of frozen peas. Let all of this simmer on the stove top for 15 - 20 minutes.

Make some toast. Put the toast on a plate and plop a blob of the mixture on the toast. (we sometimes substitute some puff pastry for the toast and fill them. My mom called these bird nests.) Really good meal for when the kids come in from sledding or ice skating.
