1 pound of salmon (drain well, if using canned)
2 tablespoons of diced red pepper (fresh)
2 tablespoons chopped fine green onion
1/2 cup mayonaisse
1 and 1/2 teaspoon dijon mustard
1/2 teaspoon fresh ground black pepper
1/2 fresh lemon juice
2 1/2 cups bread crumbs (seasoned)
2 eggs
some chopped up fresh dill (to your liking)
Pine nuts if you've got any
Mix all the stuff together and form into patties. Brown each side in a skillet for about 3 minutes (in two tablespoons of olive oil).
Put all the browned patties in a glass baking dish and heat them in a 350* oven for 10 minutes. Flip them and give them another 8 - 10 minutes.
I serve em up with a garnish of more fresh dill and a little wedge of what's left of the lemon.
