Butternut Squash Soup

This is a very quick, easy and delicious soup.

Serves 2. Easy to double or quadruple

1/2 cup onion, diced
1/2 cup celery, sliced
1 1/2 cup butternut squash, cubed
2 t. butter
2 cups water
1 pk instant chicken broth and seasoning mix
8 oz. can of small white beans

1. Saute onion , celery & squash in butter for 3 minutes.
2. Add the water and bring to a boil , add chicken broth. Reduce heat to low,
cover and simmer for about 20 minutes.
3. Stir in beans and simmer another 5 minutes.
4. Either using a blender or a stick blender puree until smooth. Or if you don't care for
creamed soup eat as is.

Calories = 234
Total carbs = 36g
Protein = 12g
Cholesterol = 0mg
Sodium = 325mg
Fiber = 9b
Total fat 5g (21% from fat)


Of course it would be even better with homemade chicken stock.
