I'm debating on trying to catch some of the rainbow trout that were released in the San Antonio river on Saturday, more will be released tomorrow, and I need recipes for cooking them. I'd really prefer to bake rather than fry them as I don't have a lot of oil and can't really afford to buy anymore before the first of the month. I do have both flour and cornmeal for a batter and can mix up a quart of powdered milk.
I seem to remember my mother making a mixture of flour, cornmeal, salt, and pepper and in a separate bowl mixing an egg and some milk. But I don't remember the proportions or anything like that so any help would be very much appreciated.
Also, can I freeze the fish before cooking them as I probably won't want more than one at a time.
