So I just got done reading about sprouting and planting of potatos for spring. *In that section is had a warning about green potatos and their sprouts. I guess they are poisonous?
I then realized that I have about 10 lbs of potatos in my pantry that are greenish brown and a few sprouts here and there.
Are these potatos safe? *I know I must have used potatos this way before and not ever thought about it. *I peeled and popped off the sprouts before i ate them. *Am I gambling by using these? Are they really that poisonous?

Green potatoes CAN be dangerous if consumed, but you'd have to eat a lot of them to be toxic or fatal. I just cut out the sprouts and any green portion (as long as it's small in size compared to the total potato).
It sounds like you may need to use these potatoes up fairly quickly in order to salvage what you can out of them. Here's what I do when I need to do up a lot of potatoes. I make this recipe and then freeze them.
Freezer Mashed Potatoes
5-pounds of potatoes
Prepare potatoes for cooking (I usually just scrub the potatoes and keep the peel on, but you may need to remove the peel to cut out the sprouts and green portions). Cook per usual. When done, drain.
Add:
6 oz. cream cheese
1 c. sour cream
1/4 c. butter
Mash.
I use an ice cream scoop and put dollops of mashed potatoes on a cookie sheet lined with parchment paper. Then I quick-freeze them. When solid, I line them up in a FoodSaver bag and vacuum shut. This way I can remove enough mashed potatoes for one or more as needed. You can also put the potatoes in user-friendly sized plastic containers and freeze. Thaw in the refrigerator and reheat. You could also "nuke" them in the microwave to thaw.

I don't know if these potatos are very safe then. The whole skin of the potato is green. There is more green than brown. LOL! I better just chuck them to be on the safe side. Especially with little ones around.
*I just peel the green off, and eat the potato... *And i'm still here to tell you about it... *lol

LOL, that's good to hear! I thought I might just do that but I didn't want to harm my kids in some freak accident if I didn't get enough green off. *I know I have eaten them that way before but that book I read really got me paranoid.

I`v wondered about that issue for years. I always have gone ahead and eaten the green ones, skins left on. I have since learned that if the green potatoes are boiled, the alkoloids are neutralized. I`ve both steamed and boiled potatoes, both bought and homegrown. I never leave the eyes on them.

I usually just peel off the green and any sprouts and use them, too. With little ones, though, it might be better to not eat them. You could save them to plant, though. They'd grow fine.
