We have enough chickens that we are getting about a doz. a day. Now what do I do with them all? There are just so many eggs recipes. I've frozen some, however storage room is at a premium. I tried pickling some, Oh, Yuck they were awful. So sour and the texture became undesirable to me.

Give / sell them to friends or neighbors? We often buy local eggs from folks who advertise them on the local radio stations Trading Post every morning. It's a 1 hour radio show where people call in with things to sell, buy or trade.
A dozen eggs will usually cost $1 - $1.50.

Check out any restaruants, cafes, B & Bs, and such and see if they would like to buy any.

A kid here put his Eggs in a cooler beside the road with a 4 sale poster and a can for the money. I don't know if you do that in your town, but we do here.

Thank you. All good ideas. Now how do I clean them. As I understand it, if you wash in water it removes the outer protection and they spoil quickly.

My experience is most eggs are fairly clean to begin with. One of the reasons people like farm-free eggs is because they haven't been washed. You can rub the poo off with a rag, if you want.

How are eggs powdered? I take it that it can't be done usung home methods, or atleast not cost efficiently....
