Has anyone made cheese ? I have recently begun. My first efforts were a Chevre from raw goats milk and Fromage Blanc from raw cow milk. Both came out pretty good.
Has anyone got any experience with making hard cheeses?
I've already got more folks wanting to buy what I make than I'm able to handle. They'll wait in line to pay $12 a pound for the soft cheeses I've made.

I make cheese. Have only just used cow's milk, however. Started with the soft cheeses and worked up to the hard ones, cheeddar, colby and swiss. I have several size presses although the large one, I rarely use since I don't want rounds that large for our size family now. IMO, patience is the biggest factor in cheesemaking. You cannot hurry the process.It is fun.
