Hi,
I was wondering if I can store my spices especially the ones that I use for canning in the freezer? I called my local home economist and she did not know. Appreciate any ideas on the best way to store different spices and herbs. Thanks!!

I'm a Penzeys (http://www.penzeys.com/cgi-bin/penzeys/shophome.html) fan and they suggest keeping spices in the freezer. I do it all the time because I like to take advantage of the lower cost when you purchase in larger quantites. The freezer is a great place because of the low humidity, low temperature, and it's away from light (artificial and natural). High humidity, high heat, and light are the three factors that reduce the potency of spices.

A good way to store soft herbs like chives parsley or coriander from the garden is to chop them up, put a tsp into each compartment of an ice tray, top up with water and freeze. Add cubes directly to cooking. This preserves their vibrant colour lost by drying. I dont know about spices. I always just keep them in an airtight container. Rosemary and thyme and the suchlike I like to dry in big bunches in the kitchen, hanging from the pan rack cos they look and smell nice in the kitchen.
