Hi, Not sure if this is the right place for this question or not, but here it goes. I'm trying to do some backyard maple sugaring. I put two taps out this weekend and was planning on doing the boiling next weekend. I'm only expecting to collect a couple of gallons of sap. However, I'm getting different advice on how to keep the sap from spoiling during the week. Some of what I'm hearing is to boil it right away, but I don't have near enough sap or time to do that. Some say to just keep it cool. Some say to freeze. Any advice from this board as to what the best to keep sap on a small scale? Thanks in advance.
