Game meat sausage recipe??

Just brought home a nice Caribou. Looking for a tasty sausage recipe. I'm sure any of your venison recipes would work.

I'd like to limit the fat to a somewhat healthy amount... none of this 1 pound meat/1 pound fat !! :-X

Also, I'd like to use beef fat... not pork. I wouldn't guess this would matter much to the recipe.

Now I've never used this recipe. And it seems a little strange to me. But here it is.
18 lb's venison, well trimmed and ground
18 lb's sausage
3 cups of water
41/2 Tbs salt
1Tbs + 1 tps black pepper
3 Tbs red pepper
3 Tbs +1 tps fennel seed
31/2 Tbs of parsley
2 tps garlic powder
4 dashes seasoning salt

Combine venison, sausage, water, salt, black pepper, red pepper, fennel, parsley, garlic powder and seasoning salt, mixing well. Store overnight in refrigerator. Shape into patties or stuff in casings. Freeze until firm. Wrap in plastic wrap, then in freezer paper and place in zip-lock freezer bags. If properly wrapped, sausage's stored in freezer will last well, retaining its flavor.
Makes 37 pounds
