View Full Version : Need help making HOT sauce...

Hello all.

We have Habanero peppers COMING OUT OUR EARS!!! :o

I have dried and ground about 4 dozen now and have some REALLY KILLER spice. A little goes a LONG way! ;)

We were talking about possiably making some hot sauce to give as Christmas gifts. Hot sauce similar to Tabasco(sp). Can anyone help me with how to do this? Where might I find some little bottles?

Simple hot sauce goes something like this:

2-3 table spoons pickling salt
3 cups vinegar
3 cups peppers

Deseed and destem peppers. Chop them up. Simmer everything together for a few minutes until the peppers soften up. Put it all in a blender and blend it up as fine as possible. Pour mixture into some glass bottles and cover them up. Store in a dark cool place for at least a month to age (3 months is better).

Don't forget to shake the bottle before you use it on your food ;)

This recipe has been around forever, and makes a good sauce.

* Have you tried googling for a recipe? *Other than that I'm afraid I'm no help. Sorry.
Maybe you can check some Mexican or Chinese or other cookbooks and see what you can find. I'd opt looking in those where you know they eat a lot of spicy foods.

How hot do you like your hot sauce? I have a couple of favorites... just let me know how hot you like it.
