You can dry them in all kinds of forms--best to keep whatever size pieces you cut fairly uniform so they dry evenly.

The only way I don't dry them is 'whole'. We usually at least cut them open...

You can dehydrate those. You don't have to thaw or blanch, just put them in your dehydrate and check them periodically to see how they are going. :) I love things that free up freezer space.
