Default Chunky Apple Butter...

I washed, peeled, cored, and sliced into pie type slices a whole bunch of freshly wind fall apples.. I have no idea what kind they were.. Doesn't seem like it would matter to me...

3 lbs of apple slices (about 4 -5 quarts in a 6 quart kettle, more or less)
1/2 C water
3 C sugar (next time I'm going to use half brown sugar)
1 tsp cinnamon
1/8 tsp nutmeg (you can use the same amount of ground clove, but I don't like it)

Cook, stir often, mash reasonably fine with a potato masher is good enough.
Cook until it kinda slides off a spoon in a glop.. Again stir often, it WILL stick..

Jar, process if you need to.. I let it cool and keep in the fridge..
