Default When to harvest onions?

I have a good crop of Spanish onions for the first time ever this year. Some of them are huge! Once all the tops had flopped over, I started pulling them and left them on the ground to dry. But then I thought, maybe I should wait until all the tops are completely brown? The few onions I have chopped up so far were pretty spicy. If I let them stay in the ground longer will they be any sweeter?
