Default Halloween pumpkin mead

Was hoping it be ready for halloween but fermentation stuck on me and set me back. So it's finally ready and is really delicious.

2 gallons of water
7 lbs honey
1 8-oz can of pumpkin
1 tablespoon pumpkin pie spice
twist of orange peel scraped of pith
yeast (Red Star Montrachet, Red Star Pasteur Red, Lalvin 71B-1122 Narbonne, or wyeast)
1 vanilla bean split

Boil, skimming, for one hour. Strain out the fruit and transfer to the fermentation container and add the orange peel and vanilla bean. Cool overnight, add your favorite yeast and stopper with your fermentation lock. Ferment approximately 3-4 weeks. Then bottle and let age for 1 year.

That sounds delicious. I've made pumpkin wine but not pumpkin mead. I may have to try that.

I'm currently waiting on a blueberry wine. I only have the one going, really need to have lots more.
