Default Rockin Relish...

Most of this recipe came from an old cook book put out by church ladies..
You know, the kind they put together for fund raisers etc... This is the kind of cook book I like best... Real everyday cookin...

Course grind...
7 C cucumbers, no seeds
5 C carrots
4 C onion (I used sweet white onion)
1 red, yellow, or orange bell pepper, no seeds
(I don't like green bell pepper)

Soak 2 hours or so in a heavily salted water... Drain and rinse well with water... Drain well...

Brine..
5 C sugar
3 C cider vinegar
1 Tsp mustard seed... (I used yellow mustard)
1 Tsp celery seed... (I used less)

Heat brine until just dissolved.. Add veggies, stir well..
Simmer 20 min or so..
Jar, seal, let cool slowly covered with a towel..

This is a mildly sweet relish that goes with most anything.. Not overly sweet, but I'm sure you can rev it up with a few sliced pepper rings, pepper flakes or powder... Use caution as I think it would get out of control easily...

This is another item I will put in my holiday give away baskets...
