1/2 C. Amaranth flour
1/2 C. Tapioca flour
dash of salt
1 T. Xanthum gum
cut in 1/4 C. Coconut oil
Mix 1 egg and 1 tsp. vinegar in a bowl, then add to flour mixture
Add cold water 1 T. at a time until the dough holds together
Chill
Roll out and cut into desired shapes and top with salt if desired
bake at 300-325 until desired crispiness and color
