Default Cajun Potato Salad

3 lbs. red potatoes
1/2 teaspoon creole or spicy brown mustard
1/2 teaspoon creole seasoning ( Slap Ya Mama Creole Seasoning is really good)
1/2 cup green bell pepper (diced)
1/2 green onion (diced)
1/3 cup mayonnaise
1/3 cup sour cream
1/2 teaspoon sugar
1/2 cup cooked bacon (diced)
salt, pepper

Add potatoes to slightly salted water, cover, bring to a boil on high heat, reduce to simmer about 20 minutes or until tender, drain and cut to into 1 inch chunks.

Combine mustard and creole seasoning, in a medium sized bowl, add warm potatoes, toss to combine.

Toss in green pepper, green onion, and bacon.

Combine mayonnaise, sour cream, sugar, and add to potatoes.

Refrigerate at least 3 hours for flavors to blend.

That sounds really good. And seeing as how I've seen the Slap Yo Mama Creole Seasoning in the stores around here, I'll be trying your Cajun Potato Salad recipe real soon.
