Default It WORKED!

The Viking cheese recipe from BWH, that is!

I have tried to make cheese over the years, never with any real success. It always tasted like warm milk or vinegar milk or really sour or whatever. But, I used an ancient packet of cheese culture marked "mesophilic", and I got curds of what tasted a lot like Colby cheese!

I did make a couple of alterations: I scalded the milk and let it cool before adding the culture, and I heated the soft curd briefly in the microwave to help drive off the excess moisture.

I got a rather dry, crumbly curd that is just about right for putting on a chef salad. Best of all, it really does taste like cheese.
