Aunt Ona’s Mandarin orange cake

Cake Ingredients

1 butter cake mix (or yellow)
1 can mandarin oranges
4 eggs
1/2 cup oil

Filling Ingredients

1 large box instant vanilla pudding mix
1 large can crushed pineapple and juice
1 medium (8 oz.) CoolWhip

Method

In a large bowl mix together cake mix, mandarin oranges, eggs, and oil. Beat by hand 4 minutes. Pour batter into three 9-inch round layer pans that have been greased and floured. Bake at 350° for 20 minutes. Cool.

Mix together the pudding mix, pineapple and juice, and the CoolWhip. Spread on cake and between layers. Refrigerate cake until ready to serve.
