Orange honey pudding

Ingredients

3 Tbsp. cornstarch
1/2 cup honey
1 1/2 cups water
1 tsp. butter
1/8-1/4 tsp. salt
1/2 cup yogurt
3 Tbsp. frozen orange juice concentrate
1 tsp. vanilla

Method

Put cornstarch and a little water in a medium saucepan and mix well. Add the rest of the water, honey, butter, and salt. Bring to a boil, whisking constantly. Boil and whisk for 1 minute. Remove from heat. Whisk in yogurt, orange concentrate, and vanilla until smooth. Pour into 4 dessert cups and chill.

Variations:

Experiment with the amount of honey and orange concentrate for the taste you like best. Add a touch of powdered ginger if you like spice. Substitute 1/3 cup cream for the yogurt for a hedonist’s delight. Substitute 2 Tbsp. carob or cocoa for the orange concetrate and add a little more yogurt or cream.
