Despite the record heat Will has been working on our new barn. Peeling and fitting those 400-pound plus support beams for the hay loft floor has been time consuming They not only have to be level, but fitted well into the notches in the poles, then screwed in place with 10-inch log screws. But to make a nice barn, Will has to take the time to do it right.
Yesterday our friend, Dale Rinne, came over with his big Cat excavator and dug a trench 8 feet deep and 100 feet long to put in our new frost-free water hydrant in the new barn. We had to get it buried before the hay loft beams and floor were put in for ease of using his excavator in the area. Now we have our hydrant in place, out of the way of barn-cleaning equipment and trucks in the barn aisle, yet convenient for watering the animals. The hydrant lets the water from our well flow when the handle is raised, and is completely drained when the handle is pushed down. That way, no water is left in the upright pipe to freeze.
Meanwhile, I’ve been canning raspberry jam and making cheese from all that wonderful milk from our “wedding” cow, Lace. I’m having tons of fun with that! It doesn’t take much to make us happy here in the backwoods! Lucky thing, too, with all that budget fuss in the National Government these days. — Jackie

Another question was just answered for the blog; it’ll be coming up soon! Most cheddar cheese recipes are similar. There was an excellent one in BHM, recently, from Ricki Carroll’s book HOME CHEESEMAKING. I use a very similar one, myself, with great results.

I made my first batch of Mozarella night before last. Then used the whey in the dough for pizza last night. Mmmm Mmmmm Good. I can only imagine how wonderful cheese is from your Wedding Cow! What is your favorite recipe to use for cheese? Do you have a favorite cheddar cheese recipe?
