Canning bacon bits

My quick question is can I can real bacon bits? And how?

I’m sure you could, but it would be easier and better (less chance of scorching) to just can the bacon then crumble it as needed. (I usually just use bacon flavored TVP’s!) — Jackie

Mock pineapple

I am trying to make mock pineapple out of zucchini and I have found two different recipes. One says to water bath pints for 15 minutes and the other one says to pressure cook pints for 30 minutes at 10 pounds of pressure. Which one do I do?

I have recipes for both, although I water bath mine for 25 minutes instead of 15. My recipe says to pressure can this recipe for 10 minutes if you choose to pressure can instead of water bath. I use the boiling water bath method as with the pineapple juice and sugar, this vegetable becomes high acid. — Jackie

  1. I would love your recipe for ‘mock pineapple’. The neighbors aren’t answering their doors anymore when I knock and I’m tired of stuffing zucchini into unlocked cars up and down the street…….
