Canning cream

Jackie – can I can fresh cream from my cow? I know that the stuff from the store is super heated and the purchased cow’s milk doesn’t can right – but my own milk does. Can I can cream and have it turn out somewhat ok? I see that people can cream cheese — can I can my own homemade cream cheese?

I really don’t think that cream would can up well. I have not canned homemade cream cheese yet, so I can’t advise about that. Any readers out there that can help Marilyn? — Jackie

Wood flooring

I love your hardwood floor, but am wondering how it is holding up to the “snow pacs”? (I can see feet in your picture for the current post!) I spent a winter near Isabella Minnesota 32 years ago and my current locale, while usually a little “warmer” (temp wise), has winds that cut through you. Since you heat with wood I am guessing that pacs are your norm in footwear at this time of the year — indoor and out. I am wondering how the floor is taking it? (I am considering the ceramic “wood” tiles for flooring as the boots that come through my house are similar only with less snow we get a lot of rocks, mud/grit clumps, and hay.) Our temp at the moment is -9, but wind chill is -30F. Brrrr!

We love our “fake” wood floor. It’s laminate from Menards and has stood up extremely well to farm conditions and two big, active dogs. We wheelbarrow wood into the house, the dogs play on it, and nobody takes off their boots. The only faint scratches have been when someone dragged a chair without protected legs on it across the floor. Definitely minimal.

We’ve got -12 with a windchill of -26 right now. You’re right; brrrrrrr. But definitely not as bad as last winter so far. — Jackie

  1. I have canned cream cheese successfully although the ‘expert’ cannot say if it’s safe or not…they have not conducted studies on it. (My question is always, “Why not?”. I’m guessing the American Dairy lobby so powerful and of course they would not want you to be canning your own dairy products at home. Just my guess.) If you want to try it, do your own research first. We love having home canned cream cheese at the ready on our pantry shelf. It is delicious and always spreadable. Love it! (I have a YouTube video on the subject. If you’re interested the channel name is Katzcradul.)

  2. We have laminate at our “cabin”, ie. second place that we hope to make only place asap. It has held up very well, but does show dusty shoe tracks because of its darker color. It cleans up so easily. In the past folks complained of the clicky, hollow sound when you walked. With the pad on the back there is no issue for us.

    BTW here in Eastern WA it is below freezing today. Six when I got up at 6:30. But bright sun and blue skies. LOVE it!!!! Yes I was shouting. Wish we could be here full time.

  3. I have successfully canned store bought cream cheese in half pint jars using Jackie’s instructions for canning cheese. It turned out great and I love having a few jars sitting on the shelf.

  4. Cream, and milk, is extremely low acid. IF you decide to can it you’d have to do it in a pressure canner in order to be sure its safe. Many of those cheese canning instructions say to water bath the jars which makes me cringe! As it is there are no official instructions for canning dairy products at all.

  5. I have had laminate flooring in my house for twelve years and it still looks great! We live in Colorado and get lots of snow, mud and rocks tracked over it with our boots and 3 dogs!
