Canning cheese

I canned some sharp cheddar cheese and it turned out well so I canned some pepperjack the same way. Will it be alright with the different ingredients in it or does it have to be canned different? My sister gave me a bunch of cheese and my husband is the only one here who eats it. I did look to see if there was any thing in the archives but found nothing about pepperjack.

Because of the peppers in pepper jack, I probably wouldn’t can it as peppers are a low-acid food. I’d refrigerate what you already canned, just to be safe. — Jackie

Apple cider

Can I make apple cider out of apple juice I previously canned?

Sorry, Ann, but apple cider can’t be made from apple juice. Apple juice has been processed and cider is a less-processed version. — Jackie

  1. In addition to what Brett mentioned, you can also throw an apple peel in with your juice instead of wine yeast. It accomplishes the same thing but takes longer.

  2. If the apple cider the writer is wanting to make out of their juice is meant to be a fermented beverage than it can be made with canned juice. I have done it several times with various types of yeast. Look for any local shops that carry winemaking or beermaking equipment and they can help or the internet has several great resources.
