Watching our orchard apples ripening, I got so hungry for an apple pie that I decided to take a few minutes and make one. None of ours were ripe yet so I grabbed five Pink Lady apples from the store bag on the counter. Peeling them took the longest, but in only fifteen minutes they were all peeled. I mixed in the sugar, cinnamon, and flour and let them sit in the bowl while I made the crust. I dropped the lower crust into the pie pan and then rolled out the top crust. I always make a double wheat marking on the top crust, like Mom used to do, for a vent.

Our apples are plentiful this year but not ripe enough for a pie.

While I baked the pie, I packed two seed orders so I could mail them out tomorrow. We always send them the day after the order arrives. We like to keep our customers very happy! Smelling a pie, I checked and yep, the pie was done. Mmmm, how good it smelled.

Ta Da! Here’s the pie, waiting for Will (and me) tonight.

I can’t wait to eat it, along with a wedge of nice sharp cheddar cheese. Will better not be late coming in from the field tonight! — Jackie

    We were cool but Wednesday the temp shot back up as did the wildfire smoke. The smell was really bad that day.
    The apple orchard we patronize (we live really close to one – the donuts are still warm when we get home close) opens August 22. You will *not* see us at the orchard that day – it will be a veritable zoo lol.

    • Yep, he smelled the pie at lunch time and was in pretty early to enjoy his pie. He doesn’t pay any attention to watches. Just his belly!

    Who doesn’t love apple pie! It looks great and I bet it tastes great too.
    We got a long-needed rain this afternoon and I hope it will be cooler; but I don’t
    think summer is through with us yet. Be sure to check out the full moon tonight.

    • That’s for sure. I will if it’s not too cloudy. It’s been pretty dry. Our only rains have not been even 1/4″ at a time and far between. But that’s okay as the soil was really wet earlier and now Will’s busy haying big time. It’s hot today; 93 degrees F. Ugh.

    • Can’t do that. If he eats a big lunch, he’s too sleepy to work! I saved it for dinner. Pretty good pie, if I do say so myself.

  4. Cooler here too. It went from 80 yesterday to 34 last night and is cloudy and 56 at 1:30PM! also a few sprinkles. The ladies are making cookies and I put a little fire in the back room stove!

    • Holy cow! 34 is pretty close to F…..ing. That’s scary this time of the year! Today it was 93 degrees F here and I felt like a puddle of melted butter.

  5. You could always cut out a little piece and tell him you were just checking to make sure it is good. It really looks good.

    • Believe me, I thought about it. But I resisted. What makes the pie special is I rub butter on the crust then sprinkle brown sugar and cinnamon on it. That way, the crust is crispy and sweet. Yum!

  6. I like to use 10 fresh apples, though the recipe calls for 6-8 for a ten inch pie pan. So when the pie is done, the crust is sticking way up in the air, though the apples have cooked-down underneath. Our trees don’t “make” many apples, but it’s enough to make apple pie filling and to can them. Lasts a few years, and still, so delicious.

    • Yep, it depends on the size of the apples. I stuff as many as I can into the crust for, like you said, they cook down and I like plenty of filling in my pies. We have tons of smaller apples, sweet crab apples, and not so many big ones. But I’ll have plenty to can and make various things with pretty soon.

    • Boy, it was a close call. I ate my piece, then later, we each had another. It barely made it until the next day!! Ok, so we’re undsciplined.
