Canning Parmesan cheese

I have tried your cheese canning recipe for cheddar. It was great. My question is, can you can Parmesan cheese? I love the taste and would love to can it if possible.

Yes, you can home can Parmesan cheese. I wouldn’t advise trying to can dry, grated cheese, but fresh Parmesan in block form should can up nicely. — Jackie

Amish coleslaw

A while back I saw your recipe for Amish canned coleslaw. I checked the archives to double check the recipe and found that it was listed twice: once calling for 2 cups each of vinegar and sugar and the other calls for 4 cups each. Which is correct? All other ingredients are the same.

Either will make great canned coleslaw. My original recipe calls for 2 cups each, but I’ve found that we like it with more juice so I upped the vinegar/sugar to four cups. It seems to make crisper, whiter coleslaw that way. — Jackie

  1. Thanks for the recipe for Amish Coleslaw. I made some recently and its delicious. What I didn’t know is how great it is as stir fry. Had a bit of brisket left over, not even enough for a sanwich, just shreds. Sizzled that with a bit of onion, put a pint of drained slaw in and it was great. A quick dinner that’s good for me. Now I’m not sorry I planted so much cabbage. I did increase the vinegar/sugar in the recipe to 5 cups each. I wanted all the slaw covered. Also left out the mustard seed and substituted about 1/2 tsp dry mustard since I don’t like mustard seed. Thanks again for the recipe and all the great information you share.
