Canning tomato broth

In the last issue, an article mentioned using a steam juicer on tomatoes to make tomato broth. What processing is necessary for canning tomato broth in quarts?

Canning cranberries

I have Alaskan wild cranberries and have been making vinaigrette and cranberry sauce. Can I can these and if so how do I do it?

Cranberries are nice canned up and can be used in so many different ways: muffins, pancakes, quick breads, sauces and more. And they can up really easy too. Just rinse them and make a light or medium syrup, as you wish, bringing it to a boil to dissolve the sugar. Then pack the cranberries into jars, leaving ½ inch of headspace. Gently shake or “tunk” the jar down on a folded towel to settle the berries as you go. Ladle boiling syrup over berries, leaving ½ inch of headspace. Process for 10 minutes in a boiling water bath canner. — Jackie

    I’m so glad you got a good crop of Bill Bean tomatoes! They truly are a great variety. I’ve never had tomatoes that put on so many big, big tomatoes with such great flavor. Ever. Ours are wonderful this year too. Everyone who comes into the garden goes “Wow!”.

  2. Miss Jackie, The Bill Bean tomatoes are really producing and such huge fruits!!!
    Last year I only got 2 viable plants from the seed and only 2 fruits of perhaps a pound, the deer skunks and whatever loves to raid gardens in the night finished the rest of my Bill Beans and a lot of other tomatoes as well as limas watermelons and whatever appealed to them….. I saved all the seed from my 2 tomatoes and planted about a dozen plants this year and gave a few to friends. WOW!!!! so many of them are nearly 2 pounds and several were well over that. My largest was 2 lb.14 oz. It only takes 12 or 14 of these beauties to fill a 5 gal. bucket over the top!!! They have only a few smaller fruit of 8 to 12 oz.They taste great on a sandwich and are wonderful canned. I love Bill Bean tomatoes.
