Dehydrating sweet potatoes

Not a question, Jackie. Hopefully something to suggest to others to help all. I dehydrate sweet potatoes when I can buy garden fresh. I grate them like cheese and use them in soup, stews, pancakes (instead of white) and meatloaves, etc. Wonderful. I had problems at first with the dehydrator shelves. I cut regular nylon net, not the bridal net, to fit my trays and it works great, over and over. Please let me know what you think of this.

Home-canned meats

I have seen folks eating home-canned meats right out of the jar. If we must boil the vegetables to make sure, how can meat just be eaten without boiling? How do you prepare your canned meat for safe consumption? How long for solid meat and how long for broth? Or can one really just eat from the jar? If heating must be done, can meat be fried to safe temperatures to kill what may be lurking in the home-canned meat?

It’s really not a good idea to eat home canned meat without heating it to boiling temperature (by baking, casserole, frying, roasting, or boiling) for 15 minutes. You’d “probably” be okay…usually. But if there was a chance toxin or bacteria in there, would you really care to sample that too? Not me. I heat my meats first, just to be safe. — Jackie
