Dublin Coddle

Here is a good old world favorite that really fills you up.

Dublin Coddle


2 pounds potatoes, pealed, thick sliced
2 pounds yellow onions, thick sliced
2 pounds smoked sausage, thick sliced
1 pounds ham, cubed
2 Tablespoons parsley
Salt and pepper to taste


Place all ingredients in a large, heavy kettle. Add just enough water to barely cover. Bring to a boil, then reduce the heat and simmer till thick (approx. 2 hours), stirring occasionally.
